Primal Pancakes Part II----Sandwich bread?

These PRIMAL PANCAKES are super simple and delicious but I am cutting out two of the ingredients, fruit and nuts to test allergies/intolerances. So, I whipped up PRIMAL PANCAKES PART II to replace. It could be breakfast, or it could be bread for a sandwich!

INGREDIENTS (5 or LESS):
-Egg
-Coconut Flour
-Anutra (better than Flax seed)
-Coconut Milk

-Crack the egg
-Fill up a 1/4 cup half way with coconut flour and the rest with Anutra
-Put APPROX 1/3 Cup of coconut milk (add until it's a little thicker than pancake batter)
-Cook on a skillet like pancakes! It does not expand, so shape the "dough" how you like.

STUFFED ACORN SQUASH


INGREDIENTS:
2 thin filets of chicken (cut very small before cooking)
1/4 c. Chopped onion
1 tsp. Minced garlic
1 c. Diced apples
1/3 c. Dried cranberries (no sugar please)
1/3 c. Chopped walnuts
1 tsp. Fresh rosemary, finely chopped
1 tsp. Basil
2 tbsp Parmesan cheese (raw/ unpasteurized or omit)
Pinch of pepper
2 tbsp honey

Bake the Acorn Squash on 350 for 40 mins (until soft) 
Upside down on a pan with 1/2 inch of water
Take off water
Let it cool down/ dry up
Scoop out inside with fork or spoon (CAREFULLY)
Set aside in a bowl
Save squash skin


Sauté the onions, rosemary, basil, and garlic until the onions are brown
Add the chicken and cooked it fully
Stir the meat mixture with the parmesan, apples, walnuts, honey, cranberries, squash
Stuffing before the squash insides was added.

Put "stuffing" back into the Acorn shell and baked for another 30 minutes! 

Then I cut it in half (can't eat it all!) to save for tomorrow (maybe breakfast :))

Acorn Squash Fries

Acorn Squash fries!

Cut and gut the squash (save the seeds for later)
Peel the back of the squash...I hope he wasn't trying to be modest...
Slice very small (about a cm in width and 2 inches long)
Mix with 1 tsp of melted coconut oil 
Add spices of choice
 (basil, sea salt, cinnamon, red pepper flakes, and rosemary. Really it's whatever)
Baked it on 400 for about 30 minutes 
Throw those seeds it too for about 15 min
Baking

Acorn Squash Fries
Acorn Squash Seeds!

Pumpkin Puree


Cut the pumpkin into 6 pieces.
(It helps to use a hammer!)







Then dig out the insides and put the seeds aside to cook later!         

Preheat the oven to 400 and put the pieces face down with two cups of water.
Then cook for 45 minutes.








Allow the pumpkin to cool, then scoop out insides!



 Then smash with a fork

Yummy puree! This could be the finished product but you can also blend it.

Sometimes you make a mess and spill about two cups of puree on the floor :)








Brussels Sprout Slaw


DRESSING INGREDIENTS:
1/3 of Extra Virgin Olive Oil
 1.5T Apple Cider Vinegar
1tsp Pepper 
 1/3 C Dijon Mustard 

SLAW INGREDIENTS: 
 One Apple (chopped)
Bacon (crispy)
1 C Walnuts (Roasted)
  2 T Green Onions (sliced) 
 1/4 cup dried cranberries
Bag of Brussel Sprouts

Slice the Brussels sprouts about 1/4 inch thick. Personally, I think the thinner, the better!


Toast the walnuts in the oven
 Crisp the bacon
sauté the brussels until crispy brown
then mix all ingredients.
